One of our favorite wines to make each year, we feel that producing stunning, varietal-specific Pinot Gris is quite difficult. Modeled after an Alsatian style, we focus on balancing the varietals spicy character with both texture and elegance - seeking the perfect combination of richness and ultra bright acidity. Our block at Spanish Springs sits along a very low yielding hillside that grows in marine sandstone. 12 hours of skin contact precedes a very gentle pressing, followed by a slow fermentation in new and neutral French oak cooperage. Twice weekly lees stirring helps to build silky texture during its 10 months of elevage. Explosive and complex, with Satsuma mandarin, citrus, nectarine, spice and flowers framed against crunchy acidity and a minerality that comes from the ocean breezes that waft over Spanish Springs every day.
